Recipe: Pueblo Green Chile Cornbread

Gather up your ingredients for this spicy take on a staple side dish.

Make sure to measure all ingredients BY WEIGHT.

Dry Ingredients:
  • 10 oz. all-purpose flour
  • 10 oz. corn meal
  • 8 oz. sugar
  • 1 oz. baking soda
  • 0.4 oz. salt
Wet ingredients
  • 4 oz. eggs
  • 15 oz. milk
Ingredients to fold in:
  • 4 oz. grated cheddar cheese
  • 3 oz. diced Pueblo Green Chiles
  • 4 oz. corn kernels

Equipment needed: 4-quart mixing bowl, whisk, rubber spatula, parchment paper, casserole dish, cooking spray

Directions:
  1. Mix the dry ingredients in the mixing bowl. Add the wet ingredients and mix with a whisk until just incorporated. Don’t over-mix.
  2. Gently fold in the cheese, chiles, and corn.
  3. Lightly spray casserole with spray, line with parchment paper, and spray the top of the paper. Be sure to spray the sides of the casserole dish, too.
  4. Pour mixture into casserole and bake a 350° F for 13 minutes. Cool and serve.
